Recipe: Easy Mexican Chicken

Layer a 9 inch by 12 inch pan with 2 cans drained (pinto, kidney, or white northern beans.)
Cover beans with 6 to 8 boneless, skinless chicken breasts.
Pour one large, or two small jars salsa over chicken.
Bake at 350 degrees for one hour and 15 minutes (if chicken is thawed) or one hour 30 minutes (if chicken is frozen)

This casserole is delicious and freezes well. Serves 6 to 8.
It is low in fat, high in fiber, and high in vitamins A and C, potassium, iron, and protein.
